I’ve always said, “If you’ll eat a chicken, you’ll eat anything.”  And if you're from Louisiana, you probably know we eat some wild things, crawfish, gator, and even the occasional snail. But nutria? That’s where a lot of folks slam on the brakes.  

The U.S. Fish and Wildlife Service is encouraging Texans to cook and eat nutria to fight the invasive species. Even here, where we celebrate a good crawfish boil, not everyone is ready to put a swamp rat on their plate.

What Is Nutria, and Why Is It a Problem? 

Nutria, officially called Myocastor coypus, are oversized rodents that have been tearing up Louisiana wetlands for years. They destroy marshes by eating the roots that hold the soil together, speeding up coastal erosion. Conservationists are desperate to thin the population, and they say the meat is lean, high in protein, and tastes like rabbit. Sounds fine on paper, but getting past the "big swamp rat" image is another story. 

Louisianans Already Eat Some Wild Stuff 

Louisianans are no strangers to adventurous eating. Gator? Absolutely. Escargot? Bring it on. Feral hog? As long as you soak it in vinegar and cook it low and slow. Crawfish? That’s practically a food group around here.  

But nutria? That’s a harder sell. Even people who love frog legs and fried oysters look at nutria and think, no thanks. 

Could Eating Nutria Catch On? 

The idea makes sense if you look at it strictly from a conservation angle. Fewer nutria, healthier marshes. But culture runs deep in Louisiana, and food is about more than just eating. Sitting down to a plate of nutria étouffée just doesn’t feel right to most folks around here. 

We’ll keep loving our crawfish boils, gator tail, and even the occasional batch of frog legs. But nutria? That’s one item we might leave off the menu, no matter how many people tell us it's good for the environment.
