The Salvation Army of Shreveport is preparing its Mobile Emergency Disaster Response Feeding Canteen to assist with south Bossier flood relief efforts.

"It is a large mobile unit. It is a full kitchen. It has oven, stove, all the things you could ever want in a kitchen - refrigerator, freezer, all of those options," said Captain Lauren Boatman. "And what we do is we bring pre-pepared food to start with, and then if we need more we can always prepare it on the canteen itself."

The canteen unit is expected to be in service Thursday and Friday, providing round-the-clock feeding operations for about 50 first responders. It offers are emergency officials two hot meals per day, two cold/sandwich meal options per day, plus water and beverage services.

Capt. Boatman says if necessary, it'll also be used to feed residents displaced by Red River flooding who are staying at American Red Cross shelters in Caddo or Bossier Parishes.
