Americans eat more meat (per capita) than just about everybody else in the world. But, surprisingly, only a few states have meaty dishes as their official foods.

But what if every state had an 'official meat'? Undoubtedly, our neighbor to the west, Texas, would be something beefy! Might West Virginia (the state that gave us Jed Clampett) go with something smaller? Squirrel, for example? And without question California would go tofu (we know it's not meat, but in Cali it's more important to be PC than well fed.)

And what of our home state, Louisiana? After weighing all the options, there is really only one choice: andouille sausage. After all, with it, we wouldn't have gumbo or jambalaya. And as the saying goes, 'No gumbo, no Louisiana'!
